Yummy, Less Fat Cookies!

I have made Toll House Cookies for many, many years. They are always yummy and gone in a day or so. The recipe calls for 2 sticks of butter/marjarine. About 15 years ago I started to only put in one stick of butter. The cookies were great! Recently, I cut out a few more tablespoons of butter only putting in 6 tablespoons as opposed to the full 8. The cookies still turn out great. I add the full 2 1/4 cups of flour. You can find the full recipe on the back of the Nestle brand Chocolate Chips, (and usually on the back of any brand of chocolate chips.)

Goolash Recipe



This recipe came from my Aunt Riita. She taught my mom, my mom taught me...I will now share it with you!



For my family of 6 at home, these are my portions:

8 bags of BEEF Top Ramen
7 medium zucchini - peeled, cut in half lengthwise and cut chunky
1 pound cooked/browned ground beef
About 4 cups of water

In large sauce pan, put the water, then crumble up the Top Ramen, put the noodles in the pan. Add the cooked/browned ground beef. Open all the season packets, add to the pot, stir. Add the chunked up zucchini (they are raw).

Put the heat on high (how I like to cook). Cover. Let cook for about 3 - 4 minutes. Check and stir. When it is done, the noodles are cooked, there is not much liquid. This is NOT a soup. If you find you need more liquid to cook the noodles, add it; just not too much. You many need to check and stir a few times. Suddenly the zucchini will be cooked.

Very yummy.

This is what is left in the pot after the first servings. The pot was mostly empty by the time everyone finished.

Sweet Treat


Chex Muddy Buddies....

Ever had them?

They are very delightful and easy to make:

9 cups Chex cereal - I like the Rice Chex
6 ounces chocolate chips
1/2 peanut butter
1/4 cup margarine
1 teaspoon vanilla
1 1/2 cups powdered sugar

Measure cereal into a large bowl. Set aside.

Microwave Chocolate chips, peanut butter and margarine, uncovered, on high for about 1 minute. Stir. If needed, microwave 30 seconds longer until mixture is smooth. Stir often, chocolate can burn easily.

Stir in vanilla.

Pour chocolate mixture over Chex, stirring until everything is evenly coated.

Sprinkle powdered sugar over chocolate Chex, stirring constantly until well coated.

Tip: To Do List

I really like making my To Do lists.

It takes all my "things" off my mind and on to a piece of paper. I don't have to remember any of it. And it is delightful to cross something off your list.

I always put a fun picture on my list. I have put up my To Do list on the day before I broke my leg, when everything changed. I took a road I was NOT planning on.

I keep all my To Do lists on my computer, so if I ever wonder what I was doing a month ago, 6 months ago, I can look and see.
